Mexican Side Dishes with TS!!!

So, a few weeks ago, my samll group from church was having a mexican theme dinner.  By the time I was able to respond to the email with what I was bringing I quickly realized all the things I thought I might bring were already accounted for.  So then it was back to the drawing board to figure out some items I could bring to go along with the mexican theme.  Several in the group have asked me about my TS products so I thought I would start by using our most time-saving feature on my website, the Recipe Tool!

I absolutely love using the recipe search tool when looking for new ideas and ways to use my product.  You can search by a particular product, a particular meal (breakfast, snack, etc.) or even enter a descritpion of what you are looking for and all the recipes that match your criteria will populate.  You just have to try it!

Ok, so back on track!  Mexican Rice was still not accounted for and I had never really made it before so I searched for a good recipe and came across one that was so simple using the Corn, Black Bean Salsa; I could not pass it up.  Then I remembered that I had a box of the Giddy Up Guacamole Mix that I had not opened yet to try.  So within a few minutes I was able to do my part for my small group dinner.  Below are the recipes and pictures.  Hope you enjoy!

Corn and Black Bean Spanish Rice
 2 Tbsp. Oil
2 Tbsp. Onion, Chopped
1 1/2 Cups White Rice, Uncooked
2 Cups Chicken Broth

In large skillet over medium high heat saute onions in oil, until tender.  Add rice, stirring often.  When rice begins to brown stir in chicken broth and Corn, Black Bean Salsa. Reduce heat; cover and simmer for 20 minutes or until liquid has been absorbed.  ~Makes 6 Servings

 3 Tbsp. water
2 - 3 ripe avocado

Combine first 2 ingredients; let stand 15 minutes. Halve avocados and remove pits. Place avocado pulp in a medium bowl; add seasoning mixture. Mash with a fork until blended to desired consistency. Cover; chill 30 minutes. Serve with Blue Aztec Chips. Makes about 1 1/2 cups guacamole.

For best flavor, enjoy within 2-3 hours of preparation.
